I don’t remember how this recipe came into my head but I do remember when (A – 1/2, memory – 0). Sometime in September, when I was living in Bangalore I went over to a friend’s place and decided to spend the day there as a) I had nothing to do b) the whole city was shut thanks to a bandh. We planned to watch Saguni and eat dosais. But I think I had a craving for potatoes and thought of this wonderful idea to add honey (I had already done that in my house anyway). So we set out to make some.
Potatoes – 3 to 4, big ones
Oil – for frying
Honey – 2 tablespoons
Salt and chili powder – to taste
First par boil the potatoes (10 minutes give or take). Once done show under some cold water to stop the cooking process. Cut them into small cubes (I didn’t peel the potatoes). Heat some oil in a kadai/wok and add the potatoes. Keep the flame on medium so as to not burn them. Turn them evenly 2 or 3 times and add salt, chili powder and honey and cover with a lid. You’ll see in a minute or so that the honey has beautifully caramelized and the potatoes are deep golden brown. Off the stove and on your plate they go!
